Pesach French Toast with Caramelized Apples and Berries (dairy)

Ingredients

6 eggs, beaten
1 cup milk
1/4 teaspoon vanilla
6 tablespoons packed brown sugar plus additional for the apples
1 1/2 teaspoons ground cinnamon
8 thick slices Pesach angle food cake
1 large apple, peeled, cored, and cut into 12 slices
4 tablespoons unsalted butter
8 strawberries, diced
4 tablespoons toasted pecans, chopped
1 cup pure maple syrup, warmed


Instructions

In a mixing bowl, whisk together the eggs, milk, vanilla, brown sugar, and cinnamon with a wire whisk.  Soak the angel food slices in the batter, giving it a little time to completely absorb all the liquid. 

Lightly coat the apple slices in brown sugar.  Heat 1 tablespoon butter in a nonstick pan and sear the apples until the sugar caramelizes.  Reserve and keep warm. Using the remaining 3 tablespoons butter, cook the cake slices until evenly browned on both sides.  (You can use the same non-stick pan if you wish.) Transfer 2 slices of cake to each plate, and top with 3 slices of apple.  Sprinkle with strawberries and pecans and serve with the maple syrup.
