Sloppy Joe Wrap (Meat)

Contributed by Eileen Goltz

Ingredients

3/4 cup chili sauce
3 tablespoon tomato paste
1 tablespoon soy sauce
1 tablespoon red wine vinegar
2 teaspoon dried oregano
1 teaspoon ground cumin
2 tablespoon olive oil
1 cup diced onion
Salt and pepper
1 1/2 lb. lean ground beef
2 cups cooked white rice, warm
1/2 cup thinly sliced green onions
1/2 cup mayonnaise
4 10- or 11-inch flour tortillas, flavored if you prefer

Instructions

Combine the chili sauce, tomato paste, soy sauce and vinegar in a small bowl. Stir in the oregano and cumin and set aside.  Heat the olive oil in a large nonstick skillet over medium heat. Add the onion, salt and pepper and cook until the onions are tender, about 5 minutes. Transfer to the chili sauce mixture and stir to combine.  Return the skillet to the stove. Heat the skillet and add the ground beef. Season with salt and pepper, and cook until meat is browned, 6 to 8 minutes. Add the onion mixture, rice and green onions and mix well.  Divide the mayonnaise and spread it evenly over each tortilla, leaving at least a 1-inch border. Divide the meat mixture over it and wrap, folding in the sides, then the bottom and then continue rolling up.

Serving Size

Notes

Green Onions, also referred to as Scallions, has a white base that develops into a bulb. Its long, straight green shoots branch forth from the bulb. Light green or brown thrips may occasionally be found between the green branches where they protrude from the bulb. Less frequently, they can be found on the outside or inside of the long green shoots. Therefore, please check "Special Instructions" below for insect inspection.
