Leftover Chicken or Turkey (meat)

Ingredients

3/4 lb (2-3 cups) of cooked chicken meat, coarsely chopped
2 stalks celery, chopped
1/2 red bell pepper, seeded and chopped
4-6 green olives, pitted and minced
1/4 cup of chopped red onion
1/2 to a whole apple, cored and chopped
1/3 head of iceberg head lettuce, sliced and chopped
5 tablespoons mayonnaise
1 tablespoon plum or any berry preserves or 2 teaspoons honey
2 teaspoons fresh squeezed lemon juice
Salt and pepper to taste


Instructions

In a large bowl combine the chicken, celery, pepper, olives, onion, apple and lettuce. Toss to combine. In a small bowl combine the mayonnaise, preserves, lemon juice and salt and pepper. Whisk to combine. Taste to balance for sweetness. Add more preserves or lemon juice depending on your taste. Add salt and pepper to taste. Mix the dressing in with the salad ingredients.

Lettuce and Insect Inspection:

Two methods have been developed for the inspection of iceberg lettuce:
Preferred method:
1. Detach the loose leaves (‘‘wrapper leaves’’) and discard.
2. Core the lettuce and split the head in half, allowing the leaves to be
peeled away more easily.
3. Peel the four outermost layers (approximately eight leaves, not including
‘‘wrapper’’ leaves) off the head.
4. Carefully check these eight leaves. The most practical way to check is
to hold the leaf in front of direct light. Because the leaf is translucent
and the bugs are not, the bugs are accentuated and easily detected.
Check both sides of each leaf.
5. If no insects are found on these eight leaves, these leaves, as well as the
remaining leaves of the head, may be used without further checking. It
is recommended, but not required, that the remaining leaves be washed before
use.
6. If three or more insects are found on the first eight leaves, the remaining
leaves must be washed and checked prior to use.
Alternate method:
After completing steps 1–3 above, discard the outermost eight leaves. The
remaining portion of the head may then be used without further checking.
It is recommended, but not required, that these remaining leaves be washed before
use.

Serving Size

Serves 4. This recipe can be doubled or tripled.


Notes

This recipe includes green olives and they give the salad an interesting tang. Iceberg Lettuce requires insect infestation inspection. Please see "Special Instructions" section below:
